Spicy Sofritas Tofu Bowl

These spicy Sofritas Tofu bowls are simple, healthy, and super delicious! Packed with fresh vegetables, savory tofu, fluffy rice, black beans, and creamy avocado, this vegetarian dish will have your tastebuds tingling! Pairs well with California Pinot Noir or Sauvignon Blanc.

Ingredients

For the Tofu:

  • 12 oz of firm tofu
  • 1/4 cup chili powder
  • 1 tbsp chipotle powder
  • 1 tbsp ground cumin
  • 1 tbsp garlic powder
  • 1 tbsp oregano
  • 1 tsp salt
  • 2 oz vegetable oil

For the Beans:

  • 2 oz vegetable oil
  • 1 can of black beans rinsed
  • 1/2 cup sweet corn kernels
  • 2 oz lime juice
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1/2 tsp black pepper

For the Rice:

  • 2 cups chopped arugula
  • 1/2 cup chopped cilantro
  • 4 cups cooked white rice

For the Vegetables:

  • 1 cup roughly chopped red, green, and yellow peppers
  • 1 cup roughly chopped plum tomatoes
  • 1 ripe avocado sliced

To Garnish:

  • 1/4 cup chopped green onions
  • 1 to 2 cups corn tortilla chips
  • 4 lime wedges

 

Instructions

  • Method:
  • Combine all the dried tofu ingredients into a mixing bowl and blend together.
  • Crumble tofu into the spice mixture and blend together until all tofu is evenly coated.
  • Heat a frying pan with oil on medium-high heat. Once hot add the tofu mixture and cook for about 5 minutes or until tofu is slightly crispy. Remove from pan and set to the side.
  • Add approximately 2 oz of oil into the hot pan that the tofu was cooked in. Let the oil heat for 1 min and add the bean ingredients to the pan. Cook on medium-high heat for about 3 to 5 minutes. Stirring constantly to avoid sticking.
  • Combine rice ingredients into a separate bowl and mix.
  • Building the Bowls:
  • Divide the rice mixture into the center of 4 plates.
  • Working around the plate and rice. Place the spicy tofu off to the side of the rice mixture.
  • Place the peppers next to the tofu.
  • Place the beans next to the peppers.
  • Place the tomatoes next to the beans.
  • Sprinkle green onions over the dish.
  • Fan avocado in the center of rice to make a star.
  • Place corn tortilla chips (points up) around the rice in the center of the plate.
  • Finish with a lime wedge and serve.
