Honey Roasted Garlic Stuffed Olives are a sophisticated and flavorful appetizer that will elevate any gathering. Ingredients
- 2 heads (78g) garlic
- 1 tablespoon extra virgin olive oil
- 1 tablespoon honey
- Salt and pepper, to taste
- 1 sprig fresh rosemary
- 35-40 (148g) pitted Castelvetrano olives
Instructions
- Heat oven to 400°F.
- Cut the top off the garlic heads to expose the cloves inside. Set them in a large piece of aluminum foil and drizzle with the olive oil and honey. Season with salt and pepper and place the sprig of rosemary on top. Close to seal and place on a baking sheet to catch any drips.
- Roast garlic for 45 minutes or until soft, but not mushy. Let cool.
- Carefully remove the cloves from the garlic skin and place one in each olive. If the cloves are too big, cut them in half vertically. You can also use a chopstick to push them down into the olive.
- Serve immediately or place in an airtight container and refrigerate for up to a week.
