Radicchio Salad with Asian Pear, Bacon & Pomegranate

This is a robust radicchio and butter lettuce salad that’s brightened with the fruity notes of juicy Asian pear and pomegranate. The pantry-friendly dressing of honey, lemon juice, shallot and olive oil does a good job of tempering the bitter radicchio while adding a nice hit of acid to balance everything out. The crumble of crisp bacon is the finishing touch for the absolute perfect bite. Serve as a starter or a side with salmon or pasta. We recommend a California rosé or Pinot Gris to celebrate such a gorgeous salad.

Ingredients

For the salad:

  • ½ medium head (173g) radicchio
  • ½ medium head (156g) butter lettuce
  • ½ large (200g) Asian pear, cored and diced
  • 4 pieces (175g) bacon, cooked and crumbled
  • ½ cup (86g) pomegranate arils

For the dressing:

  • 1 medium (35g) shallot, minced
  • 2 tablespoons honey
  • 2 tablespoons fresh-squeezed lemon juice
  • 2 tablespoons extra-virgin olive oil
  • ½ teaspoon kosher salt

Instructions

  • Wash and thoroughly dry the radicchio and butter lettuce. Thinly slice the radicchio and tear the butter lettuce into bite-sized pieces.
  • Arrange the butter lettuce and radicchio on a large platter or in a large salad bowl. Top with Asian pear, bacon, and pomegranate.
  • Whisk all the ingredients for the salad dressing together in a medium bowl. Drizzle the dressing over the salad and serve.
