Brussels Sprout Tacos

If Taco Tuesday isn’t already in your weekly recipe lineup, it’s about to be! These vegetarian tacos can easily be made vegan by substituting Greek yogurt for vegan yogurt. Brussels sprouts are a hearty vegetable that gives these tacos a great nuttiness and crunch, and like many great California wines, several thousand acres of them are grown in California’s coastal counties including Santa Cruz and Monterey. We’ve paired these tacos with a California Zinfandel or a California Sauvignon Blanc.

Ingredients

  • 12 4-to-6-inch corn or flour tortillas
  • 1 cup chopped brussels sprouts
  • 1 tablespoon minced garlic
  • ½ cup ¼ inch x ¼ inch cubed sweet potatoes
  • ¼ cup chopped Spanish onion
  • ½ cup sweet corn kernels
  • ¼ cup extra virgin olive oil
  • 1 tablespoon ground cumin
  • 2 tablespoons chili powder
  • 2 teaspoons garlic powder
  • 2 teaspoons sea salt
  • 1 teaspoon ground black pepper
  • ¼ cup lime juice
  • 1 cup shredded iceberg lettuce
  • 1/3 cup chopped cilantro
  • 1/3 cup chopped green onions
  • ½ cup shredded red cabbage
  • ½ cup plain Greek yogurt
  • 1 tablespoon lime juice
  • ¼ cup finely chopped cucumber
  • 1 teaspoon salt

 

Instructions

  • For the filling, heat oil in a pan on medium-high heat. Once hot add the brussels sprouts, sweet potatoes, Spanish onion, garlic, and corn and cook for 3 min, stirring occasionally to cook evenly.
  • Add the spices (cumin, chili powder, garlic powder, salt, and pepper) and cook for 3 to 5 min until sweet potatoes are slightly soft.
  • Add lime juice and cook for 2 to 3 more min stirring to get everything incorporated.
  • Once the filling has cooked, set aside and mix your lettuce, cilantro, green onions, and red cabbage together in a bowl for the crunchy topping to your tacos.
  • Finish prepping your dish by putting the sauce together. Substitute vegan yogurt here if you want to make this dish vegan. Mix up your yogurt, lime juice, cucumber, and salt in a small bowl to spoon over your tacos.
  • For best results, warm your tortillas before building your tacos. Enjoy!
